Turkey Cooking Instructions (detailed instructions)
Chef Jason Wortzman prefers simple seasoning when roasting a turkey. He cleans and dries the bird with paper towel inside and out. Then he seasons the inner cavity, breast, back and legs with sea salt and freshly ground black pepper. He sometimes adds paprika as well.

Orange cracked pepper cranberry sauce. See recipe. This recipe that Chef Jason created adds an extra complexity of flavour to traditional cranberry sauce. He used Inkspot 2007 Vin Noir from South Africa but a fruit forward Pinot Noir or similar would also work well |

Dried cranberry barbecue sauce. See recipe. This recipe goes great with barbequed turkey or chicken or can be served as an alternative to traditional cranberry sauce. To make it a little spicier you can double the quantity of chilpotle peppers. |
