Cooking Instructions
Preheat oven to 350F (175C). Season inside and out and place in a roasting pan with a wire rack, breast side up. Cover loosely with foil for the first hour of cooking. Roast for 3-4 hours until the inserted meat thermometer reads 175F (80C), or 180F (82C) for a stuffed bird. Cover loosely with foil and let stand for 15-20 minutes before carving.
