Amanda Felberg's Black Bean Turkey Burgers with Chipotle Mayo
Ingredients
| 500 g or 1lb |

| 1 can | black beans (540 ml), drained |
| 1 | egg |
| 1 tsp / 5 ml | cumin |
| 1 tsp / 5 ml | coriander |
| 1 tsp / 5 ml | chili powder |
| 1 tsp / 5 ml | chili flakes |
| 2 tsp | seasoning salt |
| 6-8 slices | Bothwell Old Cheddar |
| 6-8 | Ciabatta buns toasted |
| 6-8 slices | tomato |
| 2 | avocados, sliced |
| 1 head | green leaf lettuce |
| 1 bunch | cilantro chopped |
| 1 can | chipotle chilies in adobo sauce (7 oz) |
| 4 | garlic cloves |
| 4 tsp | brown sugar, firmly packed |
| 1/2 tsp | salt |
| 1 tbsp | lemon juice |
| 1 cup | mayonnaise |
| 1/2 cup | sour cream |
Directions
Preheat grill.
Using food processor, puree the beans until they are almost smooth, keeping a bit of the bean consistency. Add remaining ingredients and mix together. Form into 6 - 8 burgers. Grill patties 5-10 minutes per side on an oiled grill or until a thermometer inserted into the patty reads 175ºF. Grill onions next to meat.
Chipotle Mayo
In a food processor, puree the chilies to a smooth consistency. Set aside 3 tablespoons of the chipotle puree. The chipotle puree can be spicy, so add less than the 3 tablespoons to reduce the heat in the mayonnaise. The remaining puree can be frozen for another use. Clean the bowl of the food processor and add the garlic and brown sugar. Pulse. Scrape down the sides of the work bowl and add the salt, lemon juice, mayonnaise, sour cream and the reserved chipotle puree. Process to combine thoroughly.
After onion is cooked, grill old Bothwell cheddar on top of onions. The grilled cheese puts the meat and onions together nicely on the bun (like a patty). Garnish with remaining ingredients.
