Breaded Turkey alla Parmigiana
Quick and easy to prepare Turkey alla Parmesana
Ingredients
| 6 slices |
turkey breast, about 1/3 inch (1 cm) thick Granny's Turkey Boneless Skinless Breast |
| 1 cup | fine dry breadcrumbs |
| 1/4 tsp | salt |
| 1/4 tsp | oregano |
| 1/8 tsp | pepper |
| 2 | eggs, slightly beaten |
| 3 to 4 tbsp | oil |
| 14 oz | can spaghetti sauce |
| 1/2 lb | sliced Mozzarella cheese |
| 1/2 cup | finely chopped green pepper |
| 1/2 cup | finely chopped mushrooms |
Directions
Preheat oven to 350ºF (180ºC). Combine breadcrumbs, salt, oregano and pepper.
Dip turkey slices in egg then dredge in seasoned crumbs. Heat oil in skillet and brown breaded turkey slices on both sides until lightly crisp. Transfer to 11 x 9 inch (34 x 22 cm) baking dish.
Cover turkey slices with spaghetti sauce, top each piece with Mozzarella cheese and sprinkle with green pepper and mushrooms.
Bake, uncovered, until sauce bubbles and cheese melts - about 20 minutes.
