Ingredients

6 lbs Granny's boneless, skinless, chicken breasts (or chicken fillets)
Granny's Chicken Boneless Skinless Breasts
2 1/2 cups crushed corn flakes
2 eggs, beaten
1/2 cup flour
2 tsp each margarine and canola oil

Directions

Cut chicken breasts lengthwise into strips. Coat strips with flour; dip each into beaten egg. Roll strips in corn flakes. In a non-stick skillet over medium heat, melt half of margarine. Stir in half of canola oil. Add half the chicken and cook 3-5 minutes per side until coating is crisp and chicken is no longer pink inside. Repeat with remaining margarine, oil and chicken.Oven Method: Bake (turning once) on greased cookie sheet 15-20 minutes at 400°F (200°c).
