Ingredients
| 6 lbs |
Granny's boneless, skinless, chicken breasts (or chicken fillets) Granny's Chicken Boneless Skinless Breasts |
| 2 1/2 cups | crushed corn flakes |
| 2 | eggs, beaten |
| 1/2 cup | flour |
| 2 tsp each | margarine and canola oil |
Directions
Cut chicken breasts lengthwise into strips. Coat strips with flour; dip each into beaten egg. Roll strips in corn flakes. In a non-stick skillet over medium heat, melt half of margarine. Stir in half of canola oil. Add half the chicken and cook 3-5 minutes per side until coating is crisp and chicken is no longer pink inside. Repeat with remaining margarine, oil and chicken.Oven Method: Bake (turning once) on greased cookie sheet 15-20 minutes at 400°F (200°c).
