Chicken Skewers

Chicken skewers, healthy choice on the grill, garlic, cumin, olive oil, lemon, soy sauce, ginger, shallot.

Ingredients

4 Granny's boneless chicken breasts, cut into 1 inch cubes
Granny's Chicken Boneless Skinless Breasts
2 cloves of garlic, minced
1 tsp each: ground cumin, ground coriander
1 Tbsp each: olive oil and grated lemon zest
2 Tbsp each: reduced sodium soya sauce and brown sugar
1 1/2 tsp grated gingerroot
1 large shallot, minced
8 wooden (pre-soaked) or metal skewers

Directions

To make marinade combine all ingredients, except chicken in a small bowl.

Pour marinade over chicken pieces in a large, heavy duty,re-sealable plastic bag. Make sure all pieces are coated with marinade. Marinate overnight in the refrigerator.

Thread chicken cubes onto skewers. Grill 4 - 5 minutes per side over medium grill, turning often.

Serve immediately. You can dip them in plum sauce or eat them just as they are.
