Greek Chicken Salad
Greek chicken salad, serve as a salad or fill pita halves for a meal on the run! Light and easy to prepare.
Ingredients
| 2 cups |
diced, cooked Granny's chicken Granny's Chicken Boneless Skinless Breasts |
| 1/4 cup | calamata olives |
| 1 tbsp | lemon juice |
| 2 tbsp | balsamic vinegar |
| 1/2 tsp | sugar |
| 1/2 tsp | salt |
| 1/2 tsp | dried oregano |
| 1/2 tsp | dried basil |
| 1 tbsp | olive oil |
| 1 tbsp | chopped, fresh parsley |
| 1 | English cucumber, peeled, seeded, diced |
| 3 | Roma tomatoes, cubed |
| 2 | green onions, sliced |
| 4 cups | mixed baby greens |
| 1/4 lb | feta cheese |
Directions
Cook chicken. Let cool, then slice.
In a large bowl, combine cooked chicken, cucumber, tomatoes, onions and baby greens. Crumble Feta cheese over top.
Combine dressing ingredients and stir until blended.
Pour on dressing and toss gently.
Serve as a salad or fill pita halves for a meal on the run.
