Greek Chicken Salad

Greek chicken salad, serve as a salad or fill pita halves for a meal on the run! Light and easy to prepare.

Ingredients

2 cups diced, cooked Granny's chicken
Granny's Chicken Boneless Skinless Breasts
1/4 cup calamata olives
1 tbsp lemon juice
2 tbsp balsamic vinegar
1/2 tsp sugar
1/2 tsp salt
1/2 tsp dried oregano
1/2 tsp dried basil
1 tbsp olive oil
1 tbsp chopped, fresh parsley
1 English cucumber, peeled, seeded, diced
3 Roma tomatoes, cubed
2 green onions, sliced
4 cups mixed baby greens
1/4 lb feta cheese

Directions

Cook chicken. Let cool, then slice.

In a large bowl, combine cooked chicken, cucumber, tomatoes, onions and baby greens. Crumble Feta cheese over top.

Combine dressing ingredients and stir until blended. 

Pour on dressing and toss gently.

Serve as a salad or fill pita halves for a meal on the run.
