Lime-Chili w/fresh tomato sweet pepper sauce
Chicken breast with a kick! Lime and chili combined with a fresh tomato sauce, perfect for a special dinner!
Ingredients

Boneless Skinless Chicken Breast Granny's Chicken Boneless Skinless Breasts |
| 1 tsp | chili powder |
| 1/2 tsp | red chili flakes |
| 1 tsp | garlic, finely chopped |
| 1/2 tsp | sea salt |
| 2 tbsp | vegetable oil |
| 2 tbsp | lime juice |
| 1/4 tsp | freshly ground black pepper |
| 2 tbsp | cilantro, freshly chopped |
| Sauce -2 cups | ripe tomatoes, coarsely chopped |
| Sauce-1 | jalapeno pepper, seeded |
| Sauce-1 | small red pepper |
| Sauce-1/4 tsp | achiote powder (if available) |
| Sauce-1 tbsp | corn oil |
| Sauce-to taste | sea salt and pepper |
Directions
Preheat grill.
Mix chili powder, chili flakes, garlic, salt, oil, lime juice, pepper & cilantro and mix with chicken breasts.
Place tomatoes, jalapeno, red pepper and achiote in a pot and simmer for 20 minutes.
While sauce is simmering, grill chicken breast on both sides until cooked through then keep warm.
Heat oil in a pan and sauté simmered sauce for 5 minutes then simmer it again for 10 minutes.
Puree sauce in a blender, strain and season with salt & pepper.
Serve the grilled chicken breast with the sauce under, on top or on the side.
