Sweet Turkey Potato Salad

Fresh, quick and easy Turkey potato salad. Healthy and delicious.

Ingredients

3/4 lb deli turkey breast, cut into 1/4 inch cubes, or cooked turkey breast, cut into 1/2 inch cubes
Granny's Turkey Boneless Breast
1/2 cup dried cranberries
1/2 tsp fresh ginger, grated
1 tbsp lemon juice
a few lettuce leaves for garnish
1/2 cup low fat mayonnaise
1/4 tsp nutmeg
1 tbsp orange juice
1 tsp orange peel, grated
1/4 cup raisins
2 lbs red potatoes, cooked, peeled and cut into 1/2 inch cubes
1/4 cup walnuts chopped

Directions

In large bowl, combine turkey, potatoes, cranberries, raisins and walnuts. In a small bowl, combine mayonnaise, lemon juice, orange juice, orange peel, ginger and nutmeg. Fold into turkey and potato mixture. Cover and chill several hours. To serve, scoop salad onto lettuce leaves.
