Sweet Turkey Potato Salad
Fresh, quick and easy Turkey potato salad. Healthy and delicious.
Ingredients
| 3/4 lb |
deli turkey breast, cut into 1/4 inch cubes, or cooked turkey breast, cut into 1/2 inch cubes Granny's Turkey Boneless Breast |
| 1/2 cup | dried cranberries |
| 1/2 tsp | fresh ginger, grated |
| 1 tbsp | lemon juice |
| a few | lettuce leaves for garnish |
| 1/2 cup | low fat mayonnaise |
| 1/4 tsp | nutmeg |
| 1 tbsp | orange juice |
| 1 tsp | orange peel, grated |
| 1/4 cup | raisins |
| 2 lbs | red potatoes, cooked, peeled and cut into 1/2 inch cubes |
| 1/4 cup | walnuts chopped |
Directions
In large bowl, combine turkey, potatoes, cranberries, raisins and walnuts. In a small bowl, combine mayonnaise, lemon juice, orange juice, orange peel, ginger and nutmeg. Fold into turkey and potato mixture. Cover and chill several hours. To serve, scoop salad onto lettuce leaves.
