Turkey Chilli and Cheddar Melt

Rich chili recipe with lean ground turkey breast and cheddar cheese.

Ingredients

1 lb ground turkey
Granny's Lean Ground Turkey Breast
1 can (19 oz/156 mL) tomato paste
1 can (19 oz/540 mL) kidney beans, drained
1 can (28 oz/796 mL) tomatoes
1 tbsp Canola oil
pinch cayenne pepper
1 tbsp chili powder
1/2 cup chopped celery
1 cup chopped Cheddar cheese chunks
1 clove garlic, minced
1 large onion, chopped
2 cups shredded lettuce

Directions

Heat oil in a large skillet or Dutch oven. Brown ground turkey with onion, celery and garlic; drain if necessary. Add chilli powder, cayenne, tomatoes and tomato paste, breaking up tomatoes. Bring to a boil, reduce heat; cover and simmer 20 minutes. Stir in kidney beans, cover and simmer 10 minutes longer. Add Cheddar cheese chunks; simmer 3 minutes longer until cheese begins to melt. Spoon chilli into soup bowls; top each serving with lettuce.
