Turkey Tortilla Soup
Authentic Mexican soup with a kick!
Ingredients
| 2 cups | chopped cooked turkey |
| 1/2 cup | broken tortilla chips |
| 4 oz | can chopped green chillies |
| 19 oz | can tomatoes |
| 1/3 cup | chopped cilantro |
| 1 cup | chopped onions |
| 2 cups | frozen corn kernels |
| 1/2 cup | grated Monterey Jack cheese |
| 1 tsp | oil |
| 1 1/4 oz | pkg. taco seasoning mix |
| 6 cups | turkey or chicken broth |
Directions
In a large saucepan, over medium heat, sauté onion in oil 3 to 4 minutes or until translucent.
Stir in chillies and taco seasoning mix, cook 1 minute. Add tomatoes, breaking up with spoon.
Stir in broth and bring to boil. Add corn and turkey, reduce heat and simmer for 5 minutes. Add cilantro.
To serve: Spoon 1/3 cups (325 mL) of soup in each bowl. Top each serving with 1 tbsp (15 ml) tortilla pieces and 1 tbsp (15 mL) cheese.
