Tuscan Express Pasta
Fusilli topped with turkey breast pieces, parmesan, mushrooms and tomatoes. Nutritious and delicious!
Ingredients
| 1 lb |
boneless turkey breast or thigh, cubed or turkey stirfry strips Granny's Turkey Boneless Breast |
| 1 can | 19 oz (540 mL) tomatoes, chopped |
| 1/2 tsp | basil |
| 2 | cloves garlic, minced |
| 1 cup | fresh spinach, chopped |
| 2 cups | fusilli pasta |
| 1/4 cup | grated Parmesan cheese |
| 2 cups | mushrooms, chopped |
| 1 tbsp | olive oil |
| 1/2 tsp | oregano |
| 1/2 tsp | thyme |
Directions
Cook pasta according to package directions. Meanwhile, in a large non-stick skillet, combine turkey, mushrooms and garlic. Cook over medium heat. Add basil, oregano and thyme. Cook for 3 minutes. Add spinach and cook for 2 minutes longer. Spoon sauce over pasta and sprinkle with Parmesan cheese.
